DÉJEAN. Reasoned treatment of distillation, or distillation reduced in principle. Third edition, revised, corrected and much enlarged by the author. Paris, Guillyn, Saugrain et Bailly, 1769, in-12, XVI-463-[1] p., full brown calf of the period, decorated ribbed spine, title piece (upper cap flattened, beginning of the back bit split, worn corners, small light wetting). The author, whose real name is Antoine Hornot, a Parisian distiller born in Nuits-Saint-Georges, gives here a work of more than thirty years of experience in the field of distillation, both for food and perfumery. It is dedicated to the Community of Master Distillers of the city of Paris. A very complete work including distillation in general, stills, fermentation, the choice of flowers and fruits, aromatic plants. Numerous recipes for fruit brandies, but also for spice brandies, coffee, chocolate, liqueurs, eaux d'or, recipes for perfumes and essential oils. A great classic published for the first time in 1753. Rare.
